SIR, – With reference to John Elliot’s comment in The SF, July 30.
I have attended the Monday sale of prime cattle at St Boswells for the last 25 years. During that time I have never seen John at any of the sales, so I do not see how he can comment.
I have never attended a roadside café in America, so I can not comment on the quality of the beef sold, but I suspect, as in all walks of life, there are some excellent, some good and some not so good.
In the last 25 years, I have sold to the same butchers every week so they and I must be doing something right. If there are any problems with an individual animal, I soon know about it [full traceability].
Also, I have a freezer full of my own beef, butchered by a local butcher, cooked properly by my wife and I have never tasted better and it’s hormone free!
