Susan Brown, Boyach Farm, Isle of Whithorn, contacted The Scottish Farmer to say that she missed the reader's recipes that we used to feature.
Of course, we are always happy to publish our readers' favourite dishes, and if you would like to share your recipes with our readers, please send them in.
Susan says: "Everytime I make this gingerbread I remember the lady who gave me the recipe, obviously she was called Jessie. She is a lovely lady and she and her husband were looking after a neighbouring farm, and everyday when we went to see if they needed any help, Jessie would have a freshly made gingerbread on the table, I always looked forward to visiting!
Jessie's Gingerbread
Ingredients:
16oz plain flour
8oz brown sugar
8oz marg
8oz syrup
8oz treacle
1 teaspoon of ginger
1 teaspoon of mixed spice
1 pinch of salt
1 heaped teaspoon bicarbonate of soda
3 eggs
1 teacup of boiling water
Method:
Melt sugar, marg, syrup and treacle, add all dry ingredients and beat well. Add eggs then add water.
Bake at 150o for one hour. Makes 2 x 2lb loaf tins, and it freezes well.
