Edinburgh butcher gains Craft Butcher Diploma of Scotland

A young butcher from Edinburgh has achieved the highest formal qualification in Scotland’s retail butchery sector after completing a four-year apprenticeship.

Sonny Stuffins, of James Anderson Butchers in Leith, has been awarded the Craft Butcher Diploma of Scotland, a qualification granted only to those who successfully complete both SVQ Level 5 and SVQ Level 6.

The diploma, delivered exclusively by Craft Skills Scotland, is widely recognised across the industry as a benchmark of technical skill, product knowledge and professional excellence. It marks a significant milestone for apprentices and highlights the standards maintained by independent butchers across the country.

The Scotch Butchers Club, operated by Quality Meat Scotland (QMS), supports the qualification by funding 50% of the diploma cost for its members, helping to encourage training and development within smaller businesses.

Gordon Newlands, brand development manager at QMS, said the achievement demonstrated a high level of commitment.

“Reaching the Craft Butcher Diploma is a tremendous achievement, and Sonny should be extremely proud of the dedication and professionalism shown throughout the apprenticeship,” he said.

“This qualification sets a benchmark for excellence in our industry, and it’s inspiring to see the next generation of skilled craftspeople coming through. Through the Scotch Butchers Club, we’re committed to supporting apprentices and employers on that journey, ensuring Scottish butchery continues to thrive.”

Ewan Thomson, director of James Anderson Butchers, said Sonny had shown strong dedication from the outset.

“Sonny has worked incredibly hard from his very first day in the shop, and we’ve watched him grow into a confident, skilled and enthusiastic young butcher,” he said.

“Achieving the Craft Butcher Diploma is a well-deserved milestone that reflects his dedication to learning the craft the right way. We’re absolutely delighted for him and proud to have supported him throughout his apprenticeship.”
